Competitions and Endeavors

I've been trying to cut back on dairy fat, as my cholesterol was up a bit at my last checkup. We had been drinking whole milk, and I was using half and half in my coffee. We're now using skim and I'm putting Nut Pods original unsweetened coffee creamer in my coffee. We'll see. Our daughter-in-law shared this quiche recipe with me. She's using it because one of the kids has avoid dairy, and it has no cheese. The cheesy flavor is from nutritional/brewer's yeast. I adapted it considerably, using my favorite silken tofu to replace the egg whites. The recipe below is my adaptation.



No-Cheese Quiche

Ingredients
• 2 9-inch pie crusts (gluten-free, if needed)
• ½ teaspoon olive
• 1 onion chopped
• 2 cloves of garlic minced
• 1 cup chopped red yellow or orange bell pepper
• 1 teaspoons dried basil
• 1 teaspoons dried oregano
• 8-10 oz frozen chopped spinach thawed and drained*
• 1 teaspoon sea salt
• ¼ teaspoon freshly ground black pepper
• 4 large eggs
• 1 box silken tofu
• ⅔ cup milk or non-dairy milk
• 2 Tablespoons nutritional yeast

*If you don't have frozen spinach on hand, you can use fresh spinach, sliced zucchini or shedded broccoli. I used fresh kale, chopped up and added with the onion, garlic and pepper.

Directions
Preheat oven to 400°F. 
Add oil to a medium skillet over medium-high. Add onion, garlic and bell pepper, and cook until onion is translucent, about 6-7 minutes. If you're using fresh spinach, add it after about 5 minutes and continue sautéing until cooked down. Set aside to cool.
If using frozen spinach, make sure the spinach is as dry as possible by squeezing out all of the water.
In a Blender, Blend together eggs, tofu, milk, seasonings and nutritional yeast. Scatter veggie mixture and chopped spinach on the bottom of prepared crust. 
Pour egg mixture over top and push under any ingredients not covered by the egg mixture to prevent burning. Bake uncovered until set and golden brown around edges, about 45 minutes. Let quiche rest at room temperature for 10 minutes, then cut into slices and serve.
Store leftovers in the fridge for up to 5 days.

It was yummy. I'll definitely make it again.

You will probably remember my political activities from previous blog posts. Since we're coming up on the midterm elections, I've been busy trying to help candidates I feel have good values and who I think will work for their constituents, not special interests. I've been unhappy with the Congressman in our district, so I was happy that redistricting put us in another district. (He's running again.) Then I looked into the Congressman currently serving in that district and was dismayed at his record. A big issue for me was when he voted against allowing Medicare to negotiate drug prices, especially in light of the fact that the pharmaceutical industry donated a ton of money to his campaign. There were other issues, too. However, a candidate I've liked ever since we moved to Oregon was running against him in the primary, so I jumped in to give her my support. It really has cut into my knitting/weaving/quilting time, but she has won the primary. It took some time for the race to be called because of a bar-code issue in one of the counties, but she won by a lot, sending a 7-term Congressman back to the private sector. I will be working to help her win in November.


Last week I went to see the dermatology clinic because of an itchy place on my upper chest I've had off and on for two years. It had suddenly started bothering me a lot more, and applications of cortisone or antibiotic hadn't seemed to help. It was right where I had had a tick two years ago, when we went to Belnap Hot Springs to camp, just when the pandemic was in full swing, and we weren't really sure if it was safe to be with other people. (You can read about our adventures there here, if you like.) I picked up a tick during that adventure. I couldn't tell what it was at first. I thought I had a spider bite that I scratched and caused a scab. I put some antibiotic ointment on it. I took this photo, so I could enlarge it and see the wound better. (The shiny stuff on my skin is the antibiotic ointment, which incidentally killed the tick by stopping up its breathing holes.) This photo is much enlarged. The tick was only about 1/8". Our doctor gave me an antibiotic to take just to be sure I didn't get something like Lyme Disease from it. Last week, when I went to the dermatology clinic, I showed the place that itched to the technician and the photos I took. She identified the itchy place on my skin as exactly where the tick was in the photo and decided to remove the tiny bump that was there. 


She assured me that any tick parts would have long since worked their way to the surface, but she would send it off for biopsy. We got the results this week. Pathology said the itching was caused by altered cells resulting from the tick bite. Interestingly enough, the technician removed a similar bump from a man's back around the same time. It was the same thing. The spot is healing nicely. The itching is almost gone and is probably now from healing.

We took the stroller and went to the dog park on Thursday. Rocky got to walk around and socialize with the other dogs at the park, and Dusty got to play and have some competition to chase the ball. Then we went on to the groomer after that. Rocky was groomed last week, but it was Dusty's turn. We walked home from the groomer. Rocky decided he wanted to get out and walk when we reached the trail, so he got a little more exercise. You can see Rocky in this photo, but Dusty is entirely under the covers!


Peter's family came down with Covid on Monday. As I write this, they are recovering well, but still testing positive. Peter may have to work from home this week. They were supposed to come here over the long weekend, and it would have been fun, but we certainly didn't want to get Covid or anything else, and I'm sure they didn't feel like driving. So now all of our grandchildren have had it.



Meanwhile, Karen's family has had visitors. David's mother and sister. They came to watch the kids' dance recital. Daphne has had some exciting news. She was accepted into the Pre-Pro program for ballet, which is very competitive, and has made it to Level 4 in all the styles of dance. She will get to go en pointe next year. (For laypersons, that means she will get to use toe shoes.) Zachary is dancing well, too. Both kids really enjoy dancing.



I had hoped to start sewing the T-shirt quilt during the week, but it was just too busy.

What's in my wine glass: Motacilla Alba Monastrell 2019 from Spain. Not bad.

What's my tip of the week: If you keep kale, zucchini or frozen corn on hand, it won't matter if you run out of lettuce for salad. Kale can be chopped or sliced thinly and used just as lettuce. Zucchini can be shredded and mixed with dressing. (I like to make a dressing from equal parts olive oil and lemon juice.) I have a great recipe for frozen corn salad with tomatoes, green onions, red onion, cucumber, sweet peppers, avocado and spinach or other greens with a dressing that includes pickled garlic and salsa. I think I've shared it here before.

Sights and Sounds


It was a very busy week, but I managed to make another one of these doll sweaters to test the pattern.


They go up very fast.



I've cast on another one in blue and white, so I can see if I can get the transition from the last stripe to the ribbing tidier. Here's the front, before blocking.



It buttons in the back. Like babies, dolls don't like having things pulled over their heads.


They don't mind hats, though. I finished this cap for Pauly. The stitching isn't very straight. I had a hard time seeing what I was doing. It was a combination of not enough, being tired and not having the right glasses on. The fabric didn't show up well in my sewing machine. Pauly says he likes it, though.


It looks a little better from the front.


The dress shoes came for Pauly. I got another pair for Zachary's doll. I'll send that pair to him when I've made him some dress clothes to wear them with.


Speaking of Zachary, he and Daphne had a recital over the weekend. Wish I could have gone to see it!

The kids really enjoy dancing.

In other news, the election is still up in the air, but it's looking good for our candidate to move on to the general. There was a major snafu with the printing of the ballots, which has cause problems counting them. Our candidate is way ahead, but her opponent's home county is the one with the problem, and there are still a lot of votes left to count.

Sunday I went to church. Charlie watched from home here: 




In the afternoon we went to a concert, the last one of the season for Central Oregon Symphony. It was amazing! 

This (found on Facebook) was fun. We only have one of these that works these days, but it's highly effective. It goes off when the FedEx or UPS truck is anywhere on our street. I can't figure out how to turn it off, though!

What's my tip of the week: I make a lot of bread, and kneading it on the counter often leaves a bit of flour, which I don't want on my floor. To simplify removing the extra flour, I do my kneading right over the dishwasher. I open the door to the dishwasher slightly and pull out the upper rack, so it will stay open. Then then I'm done kneading, I brush the excess flour off the counter. Whatever doesn't go into my hand goes into the dishwasher, to be washed away next time I run it.

High Fiber–The Usual

Pauly's Stripy Pullover is finished and the pattern published. The free pattern is available here. Specifics on the project (yarn, etc.) can be found on the Ravelry project page here.



It buttons down the back. (Dolls don't like having things pulled over their heads, and this gives the doll's human family member the fun of learning to button.)


I've started one for Pippa, so I could test my pattern. I'm past where I think I would have had mistakes in the writing, so I went ahead and published it. I may make a plain one next (without the stripes).


Voting is like date night! We had decided on all the races except governor, so we watched the debate, then checked out the candidates' websites to have a look at endorsements. Of course, we had heard a lot about them, but there were a lot to choose from! I'm pretty sure whoever gets the nomination would make a good governor.



It's so nice to be able to sit down with a glass of wine and the Voter Pamphlet and other materials, do the research and then mark our ballots. We put our ballots in the drop box on Tuesday. 


Rocky went to the vet to have his heart worm test done. It was negative. They looked at the place on his side that had been infected, and it was completely healed, although there is still a little raised place there, nothing to worry about. He goes to the groomer for a minimal grooming appointment on Tuesday, more or less a puppy clip. I've been trying to keep him brushed out. He looks like a bathroom rug.



After his Paul's clothes arrived, Zachary took a photo and texted it to me on his new iPod. The shirt is on backwards but still stylish with his swim trunks and hat.

Daphne's birthday was Saturday. The doll was no surprise, although she didn't know what the face would be. She seemed thrilled with Laura. (I didn't get what the new name will be. She always changes them.) I'm happy she still likes dolls. Daddy is talking about maybe checking out the duplex that was for sale, so the dolls can have their own house.


The candidate I've been working for in the primary is slightly ahead in the polls. I think she will be great. Voting ends at 8:00 tomorrow night, May 17th.

Incoming and Outgoing Deliveries

The birthday package for Daphne went off on Tuesday and should arrive sometime today. The clothes for Zachary's Paul were in the package, too. My Paul (Pauly, as you may have guessed if you read The Doll's Storybook) arrived on Monday after an adventure I'm calling The Great Train Holdup, because it sounds more romantic than "train mechanical failure." He still arrived within the time frame given me by the vendor when I ordered, but several days late according to the delivery window given me by UPS.


I finally got an update from UPS on Monday morning that Pauly was loaded onto the van and would be delivered between 1:30 and 5:30. He arrived shortly after 1:30, and then I received another text saying he had been delivered. Those were the only notifications I received, although I could keep track on the website using the tracking number.

I quickly had him try on Paul's clothes, so I could get photos before I sent them out the next day. As I guessed, the turquoise and olive T-shirt went well with the pants he came wearing.



This was a pullover I made for Pippa. I thought it would be good on a boy, too, so I sent it along.



The bathing suit works better on a boy. 😆



It may be getting a little warm there for flannel PJs, but dolls are usually just grateful for everything they get, since they can't whine.



The shirt and blue pants work well with the cap, and I had the shoes for Emil's friend, Holly. I can order more, and I think I will, so Pauly can have some different shoes to wear.



I use elastic in the back of the cap instead of ribbon. I think it make the cap fit better. You can see the pleat in the back of the shirt in this photo.



I finished Paul's turtleneck sweater on Monday. Both of his pullovers/sweaters can be worn as cardigans, because they button down the back. (Dolls don't like to have things pulled over their heads, for some reason.)



Of the three T-shirts I purchased, Paul got the turquoise and olive one, Pippa got the blue one and Pauly got the Red one. (The cap is Paul's. I'll be making Pauly one of his own.)



The long-awaited bathing suit that had to go in with Daphne's doll arrived with Paul. Laura was wearing the hat and carrying the bag in her box when she arrived. I actually got two of these bathing suits, so I would have enough for all the girl dolls.



The package went into the mail just before lunchtime on Tuesday, expected delivery today. I signed up for updates and have received them each stop along the way. Laura and all the clothes are almost there as I write this. I have to say I'm more impressed with USPS than UPS. I wonder if that extra "S" gives them something extra.

Maybe their problem is they're hiring children, although the young man who delivered Pauly looked at least college age.

I've started on Pauly's clothes. He needs pajamas first. I thought I would make something with a T-shirt top, because Sunday's snow (!) notwithstanding, it's getting warmer here. I altered a pattern designed for the larger Happy Kidz dolls for this. I'm not altogether happy with it. I think the sleeves are too short to look right on a boy, but it will do, once I have the pants made. The next one will be better. 




I had a lot of difficulty with it, not because there was anything wrong with the original pattern, but the color is so dark, I kept mistaking which was the right side of the fabric and ended out picking out several seams. I also think I miscalculated on the sleeve and neck binding. I wasn't myself for several days due to a kidney stone (ouch), so I'm happy I got this far. I plan to try again after I get a few more things made.

I'm making some adjustments to Pippa's Wonderland Turtle to make this striped sweater for Pauly. It doesn't have a turtleneck. The two colors are carried down the edge, with two rows/rounds of each color.



You may remember from two weeks ago, I had decided to give up the separate Facebook page for The Doll's Storybook. It had made the site very cumbersome and not worth the extra time. I had set May 7th for when I would delete it. I agreed to "friend" anyone who wanted to follow the stories on Facebook. It was a real challenge to figure out how to delete it without deleting my personal page, which will now serve the stories as well. After much frustration and considerable gnashing of teeth, I managed to delete it. I've been posting the links to the stories on my personal page, and people seem to be finding them. I've been accepting friend requests from people I don't know, which I have seldom done before, but I trust that somehow it will work out. I changed my banner to reflect the page's new role, using the photo I had used on the business page. My life is already easier, at least where this site is concerned. Facebook isn't nagging me to promote my "business," and I don't have to log out of the business account to get back to my page every time I respond to something there.


We were able to get our yard sign installed in the front. It just took finding the metal stand for it. It's so nice to be able to support a candidate who is honest and ethical, as well as having the education and job experience needed to deal with issues that come up in our part of the country.



On Sunday we sang "My Shepherd Will Supply My Need" at Trinity. St. Luke's had used this piece, and I know I had sung it at least once before, so it was easy to relearn the parts where the sopranos leave the melody. That's what I like best!


We had Mexican food for Cinco de Mayo with leftovers for another night and TV dinners for the freezer. I had made lasagne earlier in the week, and the extras went into TV dinners as well. We're out of lettuce, but I made my frozen corn salad, and we've been eating that.

What's in The Doll's Storybook: In Friendly Surprises, Pippa discovers her friend Polly is really Pauly, and he's a boy! Pippa and Pauly are happy to learn from Mandy and Veronika that they can still be friends.



Not having Pauly arrive in time for last week's story caused a fortuitous change in the ending, which worked out better, I thought. The "gender reveal" ending became a separate story.

What's my tip of the week: I have one of those sinks that's huge on one side and small on the other. It takes a lot of water to fill the big side, and the small side is too small for my big pots and bowls to fit, so to save water, I fill the big pot or bowl with hot water and detergent in the big sink and wash all the small stuff in it, then dump the soapy water into the sink to wash the outside of the pot or bowl. I'm convinced it saves water.
